The Scrap Sack

Meg and I are preparing for soup. As we bring in the grub from the garden, we are saving the scraps from the cleaning and chopping in a one-gallon freezer bag. Our intention (oh what a safe word that is) is to eventually boil the bits down as part of a vegetable broth or stock.

I've done it before and it worked out great but, understandably, no two batches ever taste alike. Just think of it as less waste and more taste (Yep, that seals it, I'm the biggest fucking dork alive. And what's with all these parentheticals? Dag.).

The scrap sack is the best thing ever! Ours is a scrap tupperware that lives in the freezer, but I've had some marvelous stock come from it!

The frustration is, as you say, that no two batches are ever alike. You can never recreate a really good one...

I do the same thing and enjoy the surprise factor that comes from working with different piles of scrap. But I cook like that in general. In the fall when I start making stew and chili, Chris always says "write that one down, okay? I'd like to taste it again." and I say... "I have no idea how much of what I actually put in it."

ah well... I figure it's my job to help the family live in the moment. Or something.

I do the same thing - my freezer is always full of interesting things in various stages of preparation. Keeps life interesting and less wasteful that's for sure!

Our scraps go in a plastic coffee can, but they rarely make it to the stove. Feeding the chickens seems to take precedence. Only time scraps make it into the stock pot is when it's chili making season. Then anything is fair game.

Piles of scrap certainly test our abilities for invention. The only predictability I've found in scrap bag cooking is that if I can figure out what the dominant ingredient is, then I can usually toss in an educated guess with the herbs. Other than that I am at the mercy of the moment and I am more than okay with that.
