Backyard Breakfast


This morning I went out back, gathered some eggs, harvested red oak leaf lettuce, picked some sage, and clipped a few leaves of chard. Fifteen minutes later they became breakfast. Other than the olive oil everything came from our garden/coop and it was delicious. This is one of the major reasons why we shop at home.

I don't know why, but I've never considered 'drippy eggs' as something that would be good over greens. But it sure does look scrumptious! I suppose the richness of the eggs acts as a dressing of sorts, right?

Thanks for the comments. When the greens are growing I eat a lot meals like this. It's my take on egg salad. It gets really interesting when summer squash arrives. And Mick, I hope you learned your lesson, that you never root against Pittsburgh. Go Pens!
